Nathan Davies, originally from the Midlands, grew up in West Wales. He now has a small intimate restaurant, called ‘SY23’in Aberystwyth which has an open kitchen, letting the BBQ take center stage. ‘SY23’ has received a Michelin star and has been featured in The Good Food Guide’s Top 20 Most Exciting Restaurants in 2022, shortly after opening. Nathan’s food style is natural and driven by local produce and cooked over open fire. When Nathan appeared on the BBC’s Great British Menu his food style took him all the way to the banquet in 2022. Nathan opened ‘SY23’ after a 4-year spell at ‘Ynyshir’ with chef Gareth Ward.
