After nearly two decades in high quality kitchens, including opening the first River Cottage Canteen, Mark is now the CEO of School Diners, an organisation that is utilising all the skills required and honed to succeed in quality professional kitchens. These skills are now being used to raise aspirations and confidence amongst students aged 10-17 across the UK. Focussing on nutrition but also life skills; Leadership, Organisation, Resilience, Initiative and Communication, Mark takes 20 students per school out of their comfort zone and through their paces, cooking a four-course meal for the public, who then pay the students what they think the food and service deserved.
