Grilled Halloumi Burger with Smashed Avocado

Every good pit master needs a solid veggie burger in their arsenal. But this recipe is a favourite amongst my favourite meat eating brethren. Halloumi is one of the few cheeses that can be grilled.

Serves 4

Ingredients:

Seasoning:
1 tsp sumac
pinch of Cayenne
1 tsp of paprika

Olive oil- get ready to drizzle

4 halloumi slices- 2cm thick
2 Super ripe Avocados- halved
1 lime- juiced
pomegranate molasses- drizzle
rocket (arugula) bunch washed
2 Ripe tomatoes sliced
Fresh mint- chopped

4 burger buns (I like using brioche or demi brioche)

 

Method:

Add all the seasoning spices together in a bowl and mix well.

Take the nut out of the avocado and using a large spoon, pull the ripe flesh away from the skin and empty into a bowl. Using the back of a large spoon, smash the avocado. pour in the lime juice and give it a light mix and set to the side.

Lay the halloumi slabs on a plate and drizzle olive oil on both sides. Lightly sprinkle the season mix all over the cheese.

Once seasoned, place the slabs over direct heat and grill for a couple minutes until you have some lovely golden grill marks. Flip and do the same. Everything happens pretty quick so this is a good time to toast your burger buns.

Assembly time!
Spoon the avocado onto the four bun bases. Sprinkle the chopped mint onto the avocado then place the halloumi steaks on top. Next, drizzle the pomegranate molasses onto the halloumi. Top that with the tomato slices and rocket.

Serve and watch your friends' eyes widen with excitement!
